How can I tell if my home security camera is being tampered with during break-ins. ?

When the break-ins occur- Video turns B&W somewhat. Nothing changes. My animals stop being so active. Almost like the footage gets paused. Although sometimes I do get a glimpse of them but nothing solid. Also my cameras are not wireless.
